Meatloaf Dinner

Meatloaf, mashed potatoes, and creamed spinach.

Because meatloaf makes great leftovers.  And sandwiches.  Because it’s easy, comforting, satisfying, and delicious.  Because deep down, I like the meat + veg + starch aesthetic.  Because sometimes, that is what I’m talking about.

Oh, how satisfying and homey and food-I-loved-when-I-was-a-kid! And I mean that in the best way possible–those potato and spinach sides look wonderful! Loved the clip from Scrubs! Ha!

Growing up…it was always with wonder bread and mayo…so awesome.

Scrubs! Ha!

I named a post exactly that line, not long ago. And it was for the same reason – a weeknight meal of comfort and ease. Yes. And the creamed spinach – my favorite!

pastrychef – Oh, how I miss Scrubs.

jodycakes – Funnily enough, I was never a big meatloaf fan as a kid. I had an epiphany around 25 or so. As for the sandwich, I’m a ketchup girl.

Melissa – That was actually the line my chef-instructor used to introduce this menu the day we made meatloaf in culinary school. 🙂
