Meatloaf, mashed potatoes, and creamed spinach.
Because meatloaf makes great leftovers. And sandwiches. Because it’s easy, comforting, satisfying, and delicious. Because deep down, I like the meat + veg + starch aesthetic. Because sometimes, that is what I’m talking about.

I named a post exactly that line, not long ago. And it was for the same reason – a weeknight meal of comfort and ease. Yes. And the creamed spinach – my favorite!

jodycakes – Funnily enough, I was never a big meatloaf fan as a kid. I had an epiphany around 25 or so. As for the sandwich, I’m a ketchup girl.
