What timing! I made some chicken stock a couple of nights ago with the leftover rotisserie. Then, last night, I closed my eyes, crossed my fingers, prayed to St. Jacques Pepin, and it actually turned into consomme! I couldn’t believe it. And so, so much easier than I thought it would be. Perhaps I won’t be buying so many boxes of broth anymore either.
